Diverted, once again, to food.

I was going to do a post about the latest thing the GOP and some media (and the odd blogger) are buzzing about how Hillary is eating human babies and on the payroll of the Stasi, but I got diverted by some Hatch chili that arrived at the market recently. I roasted and skinned some, and have been casting about for how to use them. The usual doesn't sound good, so tonight I mixed some with some local hamburger.


I made two because I got too much burger. 

Then I asked the baker at Underground Bakery (the only European style bakerie I've found in the US) if he'd make me a couple of hamburger buns, not a staple in his inventory.  He agreed, and did a tray of them today. I got two. 


I think they'll be good, though in the past Hatch chilies have occasionally surprised me, and caused my stomach to wonder what the hell my mouth was doing.  So we'll see.

  1. Hatch chiles and hamburger is a perfect pairing. Were it bison burgers that would be even better. Wish bison meat was more available.
    You must be on good terms with that bakery for them to make those buns with an order for only two.

    1. Ted Turner, or at least his ranch, produce about 85% of the bison meat eaten in the US. His ranch is the largest in MT, and the bastard is constantly trying to change the law that let's people fish on the river that cross his place.

  2. Looks good although I have grown less fond of spicy foods over the years, except for Thai food. I wish we had a European style bakery here!!

    1. Elliot the baker just started the place about 6 mos ago, it's called Underground Bakery. He's the bread version of the Soup Nazi, only nice...he bakes what he wants when he wants, and says that what his customer's want is not his major concern. He sells out by mid afternoon everyday.
      Also, he makes the best bagels this side of NYC, maybe even there...

  4. You've made me want to try something with Hatch Chiles. JalapeƱo is pretty much the standard here on the central coast. Habaneros are my favorite but need to moderate those. Those buns look fantastic!

    1. Hatch are weird, they look almost identical to anaheim, but the heat can vary from essentially nothing, to almost unbearable. I once de-seeded a batch without gloves, and had to cancel all my procedures the next day.
